About the Role

The Assistant Food and Beverage Manager will be one of Diageo's hospitality expert, and will support the Food and Beverage Manager with providing strong leadership and direction across all venues. The postholder will be responsible for establishing and maintaining exemplary standards of professional service, responding proactively to identify and take ownership of customer experiences.

The Assistant Food and Beverage Manager will manage the day-to-day operations of the department, ensuring the teams are fully briefed before each shift and assisting with training and staff development as well as continuously improving the team's personal development growth. The Assistant Food and Beverage Manager will contribute towards the development of imaginative menus, profitable pricing structures and processes to cater for diverse market segments, including international visitors and connoisseurs.

The post holder will have a strong insight into market trends and continuously review our products, operational standards and service offerings at JWPS to maximize customer experience and profitability.

Key responsibilities:

  • Responsible for establishing and maintaining high standards of professional service and communicating this to the F&B team.
  • Complete administration tasks, rostering of the F&B department, stock control & dining reservation management.
  • Identify and take ownership of visitors needs and respond proactively to any concerns or feedback.
  • Contribute towards creating exceptional menus, purchasing goods, and continuously make necessary improvements to the F&B department.
  • Supporting the F&B Manager with the day-to-day operations and the smooth running of the department.
  • Anticipate visitor expectations and market trends and continually review business models and portfolio, product and service offerings to maximize customer experience and profitability.
  • Supporting the F&B Manager with monitoring and managing the financial performance of the department, and labor budgeting.
  • Be an inspirational and professional leader and participate in all aspects of serving and visitor's interaction.
  • Raise the profile of JW Princes Street and other brand homes nationally, identifying and leading on national F&B related campaigns, events and awards opportunities.
  • Oversee compliance with food safety, health and safety and other legislation. Introduce and embed procedures which will prevent potential risks of non-compliance at an early stage.
  • Comply will all alcohol licensing laws across all F&B operations and promoteDiageo's responsible drinking program.
  • Report routinely to the F&B manager on key performance indicators including sales results, productivity, margin management and net profit achievement.
  • Notify the F&B Manager of all feedback regarding positive or negative guest comments.

Leadership Responsibilities:

  • Assisting with training and staff development as well as continuously improving their own personal development growth.
  • Delegating responsibilities to the team where necessary as per the business needs and forecasting.
  • Assist with the development of a staff training plan and supervise delivery of in house and external training; develop a 'learning culture' within the team.
  • Hold team meetings on a regular basis to communicate targets, aims and objectives, standards required, company and catering partner information.
  • Working with global brand ambassadors to keep up to date with local & global JW bar/food trends.
  • Working with and maintaining a positive relationship with our catering company to ensure exceptional food offering and service at JWPS.

To be successful in this role you will need:

  • Minimum of three years management experience within a hospitality environment.
  • Experience of working within a high-end or five-star establishment.
  • Relevant hospitality or business qualification.
  • Experience with implementing food safety and hygiene regulations.
  • Have a proven track record of hitting world-class standards within customer service, delivery of targets and KPI's.
  • Have a proven track record of leading a successful team to achieve maximum performance.
  • Administration and rostering skills and the ability to operate computer packages and EPOS systems.
  • A successful record of creating & developing profitable F&B menus.
  • Expertise knowledge of all aspects of F&B management.
  • Expert knowledge of local and international food and beverage trends and promotions.
  • Proven track record of working at pace, responding to sales performance, handling multiple priorities and consistently delivering against challenging budgets.
  • Indepth knowledge of alcohol licensing laws across the F&B industry.
  • A second language would be desirable.
  • The role will require shift and weekend work.
  • Valid driving license.
