NT Food and Drink, a partnership formed between Levy UK & I (part of Compass Group), KERB Events and the National Theatre, enhances the experience of visitors to the NT. Through delivery of great hospitality across the building and with a wide range of venues from Espresso bars, cafes, theatre bars or pubs and restaurants, whether theatre-going or not, we're able to meet the needs of our guest and add to their experience of visiting this iconic venue.

Key Responsibilities

  • To manage a section and junior chefs within the kitchen i.e. breakfast and lunch, conferencing or starters and desserts.
  • To be responsible for and to manage the development, production and review of menus, including future food trends, and to be passionate about developing new styles of service and concepts in the location
  • To maintain a high standard of food quality and presentation.
  • To maintain portion control as directed by the Head Chef and manage any wastage recording, where necessary, appropriately.
  • To ensure that dishes are prepared and cooked according to the specific instructions
  • To participate in a team of chefs and front of house assistants and work collaboratively with others in pursuit of team goals.
  • To support the Head Chef in providing an efficient and effective food service as is required from the catering department.
  • To assist the Head chef in the smooth running of the kitchen in line with departmental procedures on a day to day basis including but not limited to;

o Reviewing stock levels and noting ordering requirements bringing them to the clear attention of the Head Chef or Catering Manager, as appropriate.

o Ensuring that all deliveries during your shift are checked and stored correctly, checking always for quality and freshness, rotating and controlling stock in accordance with best practice.

o Assisting with the execution of accurate monthly stock audits.

o De briefing or providing written handovers to the Head Chefr next on shift as appropriate.

  • To assist the Head Chef in the development of the catering operation in terms of service standards and profitability.
  • Ensure all policies, procedures, standards and guidelines are carefully adhered to.
  • Ensure compliance with legal requirements under the Health and Safety Act 1974 and Food Hygiene Regulations.
  • To be responsible for cleaning and care of all equipment in the area of work.
  • To perform cleaning tasks as directed by the Chef Supervisor in any and all areas.
  • To provide assistance with events catering and any other catering services undertaken by the Kitchen when needed.
  • To build effective and constructive relationships.
  • To communicate clearly, concisely and professionally.

• To attend to any reasonable request made by the client or NT Food and Drink Management
• To take responsibility for contributing towards your own development with the guidance of the Sous / Head Chef and attend training courses as identified.
• To attend training sessions when required.
