THE ROLE:

Reporting to our Director of Food and Beverage, as Cameron Grill Restaurant Manager you will lead and manage the 2 rosette Grill restaurant serving breakfast and dinner, focussed on table side theatre in the evening and providing exceptional guest service to produce memorable experiences.

With a classical grill menu with the finest local meats and seafood cleanly presented, there is plenty of scope for theatrical flair in the service which will feature flambé, deboning, carving and cheese trolley. All of this will be complemented by the Resort Sommelier and his team. You'll have full responsibility for your outlet and room service, liaising with all the key support teams to ensure you meet our mission to be Scotland's leading 5* resort.

As well as your management responsibilities, things you will typically be doing on a daily basis will include the role of Maitre D':

  • Allocation of duties for the day, week and month
  • Mise en place
  • Team Briefings
  • Kitchen liaison
  • Setting of service goals and incentives
  • Hosting the Door
  • Working the pass
  • Overseeing and delivery of gueridon and classical service techniques at the table.
  • Checking on tables and VIPs
  • Handling and resolving feedback or issues as they arise
  • Providing hands on support to the team where needed
  • Debriefs
  • Overseeing payments and Res Diary tasks
  • Ensuring completion of all pre-set tasks and checklists.
  • End of day reports and banking
  • Communicating with relevant Managers on any critical issues.
  • Take full accountability for Room Service

TO BE ELIGIBLE TO APPLY YOU WILL ALSO NEED:

  • Experience of working in a 4/5* environment
  • Current/recent management experience within a large restaurant environment
  • Strong culinary knowledge and experience of delivering fine dining/ formal gueridon service and ability to lead and deliver this throughout the team.
  • Experience managing larger teams/ junior managers.
  • Must have excellent interpersonal skills and a passion for people and service.
  • WSET Level 2, Personal Licence Holder, Food Hygiene and Trainer qualifications desirable
  • Excellent communication and interpersonal skills
  • Due to the patterns of work, and layout and location of the resort a UK Driving Licence would be beneficial.
