THE ROLE:

Reporting to the Director of Operations, the scope of the role of Food and Beverage Director is to oversee all Food & Beverage outlets of the resort including Cameron Grill, La Vista, The Club House, The Monarch Room, Lobby Bar, Great Scots Bar, In Room Dining and Meeting & Events Operation.

Job Purpose: To Lead and develop all food and beverage managers and their teams to achieve consistently high standards of service that lead to total guest satisfaction, exceeding expectations, minimised costs and maximum profitability:

  • To continuously work to strengthen and build the business by leading, managing and developing the food and beverage team to deliver exceptional service to guests.
  • To develop and retain the team by providing leadership, training and coaching through developing a culture that provides motivation and passion to deliver fantastic results.
  • To set, monitor and control operating standards in the food and beverage operation to ensure the highest level of guest satisfaction is maintained at all times. To ensure that sales are maximised to meet targets and all costs, including payroll, are controlled in line with forecasts to maximise profitability.
  • Develop and manage F&B projects across the resort.

TO BE ELIGIBLE TO APPLY YOU WILL ALSO NEED:

  • Solid experience of managing a large team of people including experience of managing the performance of managers, setting objectives and targets, and the training and development of people to a high level.
  • Previous experience in a Senior F&B Management role
  • Previous 5* resort experience desirable but not essential
  • Strong culinary knowledge
  • Experience managing larger teams/ junior managers
  • Must have excellent interpersonal skills and a passion for people and service.
  • WSET Level 2, Personal Licence Holder, Food Hygiene and Trainer qualifications desirable
  • Strong IT and organisational skills
  • Excellent communication and interpersonal skills
