We're looking for a dynamic Chef Manager to head up our team at Virgin Media O2 - a prestigious B&I site where high-level clients are regular guests. You'll have the autonomy to plan and deliver menus, inspire your team, and manage all aspects of kitchen operations while working Monday to Friday - no evenings or weekends.
Key Responsibilities:

  • Full responsibility for menu planning and food production - breakfast, lunch, and hospitality
  • Create weekly menus using Compass' "Source" platform and manage all stock ordering and supplier processes
  • Build and maintain strong relationships with senior-level clients, delivering consistently high service
  • Lead, coach, and manage the on-site catering team to achieve performance and service goals
  • Ensure compliance in all areas: HR processes, HSE (Health & Safety), Profit Protection, PCI, Food Safety, GP (target 40%)
  • Monitor and control stock, wastage, labour costs, and Did We Make You Smile (DWMYS) 10% monthly target
  • Take ownership of weekly Nexus accounts, stock takes, and compliance reporting
  • Drive the food and customer service offer forward - raise the bar in line with Compass and client expectations
  • Ensure everyday HSE standards are not only met but exceeded

Ideal Candidate & Experience:

  • A hands-on Chef Manager with strong culinary skills and kitchen leadership experience
  • Background in B&I contract catering with a proven track record of achieving gross profit targets
  • Confident in building relationships at all levels, especially with senior corporate clients
  • Deep understanding of HACCP, Food Safety, Health & Safety, Natasha's Law, Allergens, and Manual Handling
  • Experience managing stock, wastage, and ordering systems
  • Able to motivate, lead, and develop a team while staying calm under pressure
  • Tech-savvy - confident using systems like Nexus and Source for menu planning and compliance
