As Bar Manager, you'll take full ownership of the bar operation - driving performance, leading your team, and delivering exceptional speed, quality, and atmosphere every shift.

This is a role for someone who thrives on pace, takes pride in standards, and knows how to turn great service into strong commercial results.

What you'll be doing

Driving bar performance

• Driving revenue through strong operational execution and team performance
• Supporting delivery of site KPIs including sales, GP, and labour
• Identifying opportunities to increase spend per head and upsell effectively
• Maximising performance during peak trading and major sporting events

Delivering service excellence

• Owning speed of service, particularly first drink moments
• Ensuring consistent drink quality and presentation
• Maintaining smooth, efficient operations during high-volume service
• Continuously reviewing and improving bar flow

Leading and developing your team

• Recruiting, training, and developing a high-performing bar team
• Setting clear expectations around speed, quality, and guest engagement
• Driving accountability and performance across bartenders and bar backs
• Building a team that reflects the energy and personality of the brand

Owning standards and environment

• Maintaining exceptional cleanliness, organisation, and setup
• Ensuring bar layouts are optimised for efficiency and volume
• Taking ownership of bar presentation and atmosphere
• Driving consistency in glassware, garnishes, and drink specifications

Managing stock and costs

• Managing stock ordering, rotation, and availability
• Controlling wastage and ensuring accurate stock processes
• Protecting gross profit through strong controls
• Supporting stock takes and investigating variances

Product, training and compliance

• Supporting delivery of drinks menus in line with brand standards
• Building strong product knowledge across the team
• Leading training on cocktails, spirits, and service style
• Ensuring compliance with licensing, safety, and company policies

Experience

• Experience in a high-volume bar or late-night venue
• Strong knowledge of drinks, cocktails, and bar operations
• Experience managing stock, GP, and team performance
• Proven ability to lead and develop bar teams
